A Tale of Two Farmers and Their Dream
"My grandfather used to say that once in your life you need a doctor, a lawyer, a policeman, and a preacher. But every day, three times a day, you need a farmer."
- Brenda Schoepp
Bill and Kyle both grew up in Nockamixon Township, with Bill coming from a dairy farming background. After his family sold their farm, Bill began working at WoBo Farms, where he spent his early twenties milking cows and performing fieldwork. Although he later pursued a career in the plumbing trade, Bill remained connected to his agricultural roots by continuing to raise hogs over the years.
Kyle also began working at WoBo Farms at a young age, where he was involved in both dairy operations and fieldwork. He continued his work there until forming WoBo LLC with Dave Wolfinger in 2024. Together, they now grow hay and grain crops.
The beginning of Windy Knoll Farms came when Dave decided to step back and offered to sell the main farm. Seeing this as a perfect opportunity, Kyle and Bill partnered to purchase the property and carry on their shared passion for farming.
The name "Windy Knoll Farms" honors Bill’s original family farm, which was located on Traugers Crossing Road. Reviving this name pays tribute to their agricultural heritage and legacy.
Recognizing the growing demand for direct farmer-to-consumer sales within their community, Bill and Kyle chose to focus their efforts on that model. Their operation begins with growing their own crops and producing feed on-site to ensure all ingredients are non-genetically modified (non-GMO). Their livestock is raised without the use of growth hormones or antibiotics.
Their hog feed is made from a mix of corn, soybeans, and oats— the same high-quality blend that is also fed to their cows and steers, along with hay and crop silage.
All meat processing is United States Department of Agriculture (USDA) inspected and professionally packaged under the Windy Knoll label, proudly featuring their "Farm to Fork" logo on every package.
As the farm develops in the coming year, several upgrades and improvements are planned. These include modernizing feeding systems, expanding storage capabilities, and enhancing the functionality of the equipment shop.
Once these projects are completed, attention will turn to converting one of the outbuildings, known as "the wagon shed," into a dedicated farm store. Conveniently located near Park Drive East, this store will offer customers the ability to purchase pork and beef products individually or through special promotions.
In the meantime, customers can place orders by texting Bill or Kyle directly. Product cut sheets will be posted for reference.
As always, beef halves and quarters, as well as pork halves, are available to order.
